Fiji got a lot of indian vegetarian options if you're not feeling for the local food (seafood and coconut heavy; only downside for me is their local traditional staple is tapioca, which gives me total defence day ptsd of being force fed that in pri sch). Vanuatu's local food might not be a lot of people's cup of tea (including meats like coconut crab and flying fox), but there are "normal food" like fried chicken, curries, and western food. Price range is not as cheap as indo or thailand, but still cheap and it's possible to eat at atas restaurants for less than $50.
