This guide is for the Michelin foodies. For your convenience, I tried to include key information of Singapore’s Michelin starred restaurants in one page.

That includes address, reservation number, opening hours, degustation prices (if available), websites and reviews (indiciated with a blue-colored link if available). Do note the prices of some restaurants, unfortunately, are likely to increase.

 

I suspect that most Singaporeans cannot be bothered at all about chasing stars, while I hear of foodies who are going down the ENTIRE list. Some of my friends are keen to try 2-3 of them – which they previously did not hear of and are curious about. (Actually, some can skip lah. LOL)

A friend estimated that to trek through the Michelin list, it would cost at least $2504++ for lunch, and $6602++ for dinner. Can I add, plenty of patience to queue as well?

French Contemporary
Joël Robuchon Restaurant at Resorts World Sentosa RWS is Singapore’s 1st and ONLY 3 Star Michelin restaurant in the Singapore Michelin Guide 2016.

Lunches are available only during Saturdays, with menu priced at $128, $148, $168++.

The $168 Menu comes with appetizer, soup, seafood main, meat main, cheese or dessert, dessert trolley and selection of petit fours. Wine pairing at $48 for 2 glasses, $68 for 3, $88 for 4.

The Dinner Menu is priced at $208, $288, $308 for the “Menu Appetit”, and $438 for a full tasting menu. A Vegetarian 8-course tasting menu is also available at $208. Joël Robuchon Restaurant (Resorts World Sentosa)

Innovative
Restaurant Andre’s philosophical menu ($350++ per person sans wine) is based on an “Octaphilosophy” theme of eight dishes, representing Pure, Salt, Artisan, South, Texture, Unique, Memory and Terrior.

There is no signature dish per se, the only constant is “Memory”. Even if it is on the same day, guests may be offered different dishes for the same theme.

French Contemporary
The L’Atelier counter is where you can watch the chefs in full action within an open kitchen concept – as though you are watching a cooking programme.

The square counter seating is inspired by Tokyo sushi restaurants, with a sexy colour scheme of lush red and mysterious black.

Pardon us if you come across sounding ‘cheapo’, but we did notice an “Early Evening Dinner at L’Atelier de Joël Robuchon”, in which a 3-course dinner would be served at $78++ (Previously, the cost was $40++. Les Amis filled the void of fine-dining French restaurants in Singapore during the 1990s, and quickly became one of the most recognisable names in the industry. However, the group seemed to have shifted focus to their mid-tier restaurants such as Aoki, La Strada and Bistro Du Vin and casual dining concepts of Nam Nam and Pepperoni Pizza.

Chef de Cuisine Sebastien Lepinoy, who is protégé of Joël Robuchon, joined the restaurant in 2013. The Dinner Degustation Menu ($295) includes Oscietra Caviar from Kaviari with Cold Angel Hair and Sherry Vinegar, and Pan Seared Foie Gras and French River Eel accompanied by Cherry Fruits.

A more affordable Lunch Express ($65) which can be served within 45 min is available. Les Amis (Shaw Centre)

French Contemporary
French Chef Julien Royer must be one of the brightest culinary young stars around, even on an international platform.

A 4-course menu for lunch is at $88++, 6-course $128++, while the 8-course tasting menu is priced $188++. Vegetarian option is available. (6 and 8 course lunch available on Saturdays at $148++ and $208++.)

For dinner, a 6-course is at $208++, 8-course $268++. (6 course dinners only available from Mondays to Thursdays.)

Some of Chef Julien’s signature favourites from JAAN have resurfaced at Odette, such as the 55’ Smoked Organic Egg, though not without modifications. His style has become more distinctive in Odette, with an interplay of textures, balanced subtlety, with use top quality ingredients to create pieces of culinary art. Odette (National Gallery Singapore)

Akasaka Szechwan Restaurant, or Shisen Hanten as it is popularly known in Japan, was started in 1958 by the late Chen Kenmin who is regarded as Japan’s “Father of Szechwan Cuisine.”

Signature dishes emphasise the seven basic flavours that give Szechwan food that distinct boldness,
namely – sour, pungent, hot, sweet, bitter, aromatic, and salty. Ala carte and dim sum menus are available.

Japanese Shoukouwa achieved 2-stars in 4 months of operation. Is that a record?

The 8-seater sushi restaurant at is a venture between the founder of Hong Kong’s 3-star Michelin Sushi Shikon and the Emmanuel Stroobant restaurant group.

A Mio Lunch Menu ($180 per person) includes appetiser, nigiri sushi, miso soup, Japanese Omelette and dessert. For Omakase available during dinner, there are the Miyabi ($320) and Hana ($480) options. Shoukouwa (One Fullerton)

Peranakan
Candlenut led by Chef Malcolm Lee prides itself in serving inspired dishes with authentic flavours. Food served has a Peranakan base, but Western form of presentation and interpretation for some.

All their rempahs (spice pastes) though, are still made from scratched, cooked for long hours.

Dinner goes for a fixed price of $65 per head, while ala carte items are available for lunch and takeaways.

The Peranakan signature of all signature dish, the Buah Keluak ($28) is done in classic “Malcolm Lee” style. The ‘black gold’ fillings of the buah beluak (black nuts) are only extracted after they are soaked for a minimum of 5 days. Candlenut (New Bridge Road)

Innovative
The Gastro-Botanica cuisine created by Chef Jason Tan would a shoo-in for one of the best fine dining meals I had in Singapore. I won’t deny that there is this element of support for a young and talented Singaporean chef.

Located in the black-and-white bungalow EJH Corner House within the Singapore Botanic Gardens, Chef Jason’s cuisine could be described as French with some twists inspired from food from his growing up years and travels. There was also inclusion of strong botanical elements – sustainably-sourced seasonal produce and vegetables, due to its unique location.

Hill Street Tai Hwa Pork Noodles is commonly known as the best Teochew style Bak Chor Mee aka minced pork noodles in Singapore.

Here’s the ‘magic’: Al dente springy noodles tossed in a savoury vinegary sauce, filled with tender pork and liver slices, minced pork, dumplings, and a sprinkling of fried sole fish.

Led by Australian Celebrity Chef Scott Webster and local Chef de Cuisine Douglas Tay, the energy inside Osia Steak and Seafood Grill is quite infectious, with an open-kitchen where chefs present Western dishes using fresh Australian produce.

For steak lovers, I would recommend the Grainge Black Angus Beef Tenderloin with Red Wine Sauce – tender and well-executed.

Fujian
Putien has come a long way from its early days when it was still a zhi char style shop along its original location at Kitchener Road.

The Heng Hwa Bee Hoon ($8.90), Lor Mee ($8.90), Mee Sua ($8.90), Stir-fried Yam ($11.90), Bamboo Herbal Prawn ($5.90), and Sweet & Sour Pork with Lychees ($12.50) are some of my must-orders since the good old days.

Especially the Heng Hwa Bee Hoon, cooked in pork bones and old hens stock with simple ingredients like peanuts and clams, garnished with strips of seaweed and crunchy peanut.

This Duxton Hill restaurant is helmed by Chef Paul Longworth, who has built a positive reputation over at Au Petit Salut.

Tucked away at the iconic Raffles Hotel, Shinji by Michelin-starred Chef Shinji Kanesaka is an Edo-style sushi restaurant, serving sashimi and sushi at the most superior quality at an intimate setting. Probably one of the best you can get outside Japan at this part of the world.

Not to be confused with another rooftop restaurant with the same name, this Terra focuses on a Tokyo-Italian dining concept specialising in Italian cuisine influenced by the 4 seasons of Japan.

The Set Course goes for $98, while Terra’s recommended degustation menu will be Chef Seita Nakahara’s Omakase, priced at $128, $168 or $208.

Specialities include home-made Bottarga, cured in-house, using only fresh mullet roe, prized for its refined ocean-salty flavour; and Acqua Pazza (literally translated to Crazy Water), an Italian seafood soup with poached fish and other treasures of the sea.

Opened by Celebrity Chef Tetsuya Wakuda, ‘Waku’ is to ‘spring forth’ and ‘ghin’ means silver which happens to be his favourite colour.

Waku Ghin at Marina Bay Sands can be considered Chef Tetsuya’s dream ‘playground’, a 10,000 square feet expensive space, meant to serve maximum of 25 customers at one time.

The 10-course degustation menu has very hefty price tag of $450++ per person, noting that most of the ingredients used – trout, lobster, wagyu, caviar, the expensive luxurious types. Waku Ghin (Marina Bay Sands)

 I have always believed that under the Cold storage group, certain better/bigger outlets of CS or Marketplace has unique offerings and to have gd fd in sg, it cannot be too cheap

 

We do NOT have big sources or origin like in HK

I have dined at Joel Robuchon, Restaurant Andre and Les Amis.  All are good but I personally enjoyed Joel Robuchon most of all.  Restaurant Andre by Andre Chiang, I believe, is closed permanently.  Les Amis Group has several outlets with different concepts but the one that holds the candle is their flagship restaurant at Shaw Centre which oozes class and sophistication.  Food is creative and palatable.  However, I still much prefer their original location in the Botanical Gardens which exudes an air of Colonial elegance.

so far, all these restaurants had ceased their operations. be it rentals / owing suppliers & staffs money... fnb is a cut throat business here in sg.
