jeeves Posted October 16, 2011 Report Share Posted October 16, 2011 Here you go RUDE person!Ingredients:BaseButter, 120g diced (Add a little more)Digestive Biscuits, 200g finely crushedBrown sugar, 3 Tbsp (Add a little more)Cornflakes, 50g crushedCocoa Powder, 30g sifted[*]FillingCream cheese, 750g diced (Full fat)Castor sugar, 140gVanilla flavouring, 2tspCornflour, 20g siftedWhipping cream, 300mlEggs, 4 lightly beatenOreo cookies, 300gMilk, 250ml[*]Recipe for Base (Line base with cling film for chilled cheesecake)Melt salted/unsalted butter (no margarine) in pan over low heat. Add combined biscuits, sugar, cornflakes, cocoa powder and mix well. Fry till fragrant.Press into greased 23cm springform cake pan with the back of a metal spoon or by hand.Cover cake pan and refrigerate for at least 1/2 hourRecipe for FillingBeat cream cheese till smooth. Add sugar, vanilla flavouring and cornflour and beat till smooth. Add cream till mixture thickens then slowly pour in eggs and mix until just combined.Pour half the filling on biscuit base. Dip cookies in milk and then arrange on filling. Pour remaining filling on cookies. Dip remaining cookies in milk then press into filling.Place pan in water bath an bake for 1 hour. Filling must be set but still soft at the centre. Leave cake in oven for 1/2 hour with door closed. Remove water bath.
