"Who" is relatively easy - look for a thai cook or culinary teacher or Thai bpyfriend who cooks well.As for "how", first, you need to be familiar with their very basic culinary ingredients like,- fish sauce- lime juice( as opposed to calamansi which is prefered in Malay/Nyonya cooking or lemon in Western )- palm sugar- lemongrass- kafir lime leaves and rind- bird eye chilli & chilli flakes- the 3 basic curry pastes - green, red & yellow......then, try to understand the philosophy behind their cuisine, eg,- flavours need to stand out and yet balance one another- fresh herbs & raw ingredients are an integral part of dining- while fancily carved fruit & veggies seem typical along with cutesy mungbean miniature 'fruit', the driving force behind it all is their attention to detail and doing things well. Hence, a dish can be simple but it will mostly be carefully prepared.So, now that you're mentally ready, get yourself a good Thai cookbook and with guidance from the internet and experienced people, go for it!
