After sometime of experimenting and looking for new recipe, I was able to make a Cream Cheese frosting that is pipe-able and that can hold its shape.sometime watery cream can be salvage by chilling the cream in the fridge for a while, just check on it with a quick stir every 15 minutes till you get back the spreadable consistence that you require. I have been told it is not worth the effort to make croissants in the home kitchen given our warm weather conditions. unless you have an air-conditioned kitchen or you can work really quick or dont mind popping the halfway done laminated dough into the fridge every now and then. The direct-mix method is my least preferred as it can dry out quite easily. I like making tarts. Find that it can be very satisfying and the results can be really good. Quote
