For Shaun's case usually you need higher amount of carbs and sufficient protein, with total calories above daily maintenance to achieve calorie surplus. This is to allow muscle growth. My schedule as a chef is very heavy so I hit the gym about three times a week in between lunch and dinner services. I usually spend an hour there doing cardio exercises and weights. Diet: I go for a heavy breakfast and lunch and a light dinner. I try to avoid food after 9pm. I don't take protein shakes but I take plenty of meat for my protein source.
